Biotechnological tools for the pre-treatment of rice protein by-products

- To obtain detailed information about the rice protein by-products object of the project: volumes, composition, quality, actual disposal management, production variability, safety and chemical-physical characteristics (Task 2.1).
- To select and develop according to the foreseen exploitation markets (food, nutraceutical and cosmetic), the best biotechnological tools (enzymes single or in combination, and microorganisms of the Lactobacillus genus) for the pre-treatment of the protein matrix, in order to recover maximum amounts of targeted compounds (Task 2.2)
- To produce semi-purified digestates to be delivered for industry-driven peptide ingredient isolation and biological activity and safety characterization (WP3 and WP4) (Task 2.2)
